Finally, I can gorge on Pizza and still say it is healthy!
Vegan and gluten-free Sweet Potato Pizza crust.
This pizza blew me away! I haven’t had a good vegan pizza in a long time, either the cheese is wack of there is no cheese at all!
BUT, I saw this recipe on the medical mediums blog and had to try it out!
While my mum and I were two slices in last night she said ‘ it is delicious! The flavours compliment each other and the dough doesn’t make you feel heavy at all” I agree with her!
I always found that pizza dough was so heavy and left me feeling lethargic after eating but this one… we had so much energy after eating this pizza and we felt so lifted!
There are so many amazing nutrients in sweet potatoes, and it is fair to say combined with the cashew cheese… this was heavenly.
This meal will undoubtedly become a weekly regular!
SWEET POTATO PIZZA CRUST:
2 sweet potatoes (peeled and diced – yields about one cup)
3 tbsp of arrowroot starch
3tbsp of coconut flour
1/2 teaspoon of dried oregano
1/3 cup of tomato paste
1/2 tsp of dried oregano
1/2 teaspoon of dried thyme
2-3 tbsp of water
sea salt and pepper to taste
1 cup of cashews
1/2 cup of water
1/2 a lemon, juiced
1 tsp of garlic powder
1/4 teaspoon of sea salt
1/2 Medjool date!
Preheat the oven to 18o degrees Celsius.
Place the peeled and diced sweet potato in the steamer. Cover with a lid and steam for ten minutes until tender! Remove and cool.
Place the sweet potatoes in a bowl and mash with a fork until smooth. Measure out 1 cup of mashed sweet potato and leave the rest for another recipe.
Add the sweet potato to a bowl with the coconut flour, arrowroot starch, oregano and sea salt. Mix until uniform.
Make the marinara sauce by combining the tomato paste, dried oregano dried thyme, water, sea salt and black pepper into a bowl, whisking until combined.
Prepare a baking sheet, lined with parchment paper and place the dough on top. Using your hands, spread the dough to 1/4 inch thickness, bake in the oven for 20 minutes until hardened on the top. Top the pizza with Marinara sauce and your choice of toppings. Bake for another ten minutes, until it has browned at the edges!
